45mls white crème de cacao

It's hailed as the Christmas piña colada and we're definitely sold. Just look at that colour!
1 cup pineapple juice
1/2 cup vodka or white rum
1/2 cup blue curacao
1/2 cup cream of coconut (not coconut milk)
3 ice cubes
2 tbsp sugar
1tbsp water
Shredded coconut of garnish
What to do: blend the cream of coconut, vodka, blue curacao, pineapple juice and ice until smooth. Microwave the sugar and water for a minute or until consistancy is thick but moveable. Use it to wet the rim of the glass then dip in shredded coconut (this stuff is optional but it looks pretty bloody swanky!).
If you're down for dreaming away this heat, this little beauty might just do the trick.
